I headed out Thursday afternoon to gather all the food and supplies we would need to make a memorable Christmas get together. After I loaded all 40lbs of meat into my cart, I decided that I had better call Wanda, just to make sure this wasn’t too much meat. As I heard Tom yell in the background, #%&* what 40lbs, I think it was safe to say we had too much meat, so we decided on 30lbs
Supplies gathered, home I went to prepare for a day of cooking. Bright and early Friday morning I awoke and headed off to work to start my cooking for the coming weekend. First I had to make a trip out to collect all the stuff I had forgotten on Thursday- even with a list I still can’t remember things. Liz and I cooked all day on Friday. We made a scrumptious sweet potato casserole, delectable spinach & asparagus risotto, and some homemade coleslaw to accompany the ribs. We also prepared some lemon cream stuffed grapes & parmesan twist for appetizers. Liz decided she does not like making the parmesan twist, I don’t blame her, they were hard to make.
Now I’m sure you would love to know just how much we actually ate. Out of the 5 crock pots filled with ribs, we ate 2…. we will be eating ribs for the next week for lunch and dinner.
